Southern Gumbo - cooking recipe

Ingredients
    1 lb. boneless veal, cut in cubes
    1/4 c. unsifted all-purpose flour
    1/4 c. butter or margarine
    1/2 c. finely chopped onion
    2 (12 oz. size) pkg. frozen okra, thawed and cut into 1-inch pieces*
    1 (1 lb. 12 oz.) can tomatoes (undrained)
    1 c. finely chopped green pepper
    4 tsp. salt
    1/4 tsp. pepper
    1/2 tsp. dried thyme leaves
    1 tsp. fine herbs
Preparation
    Coat veal cubes well in flour.
    Slowly heat butter in 8-quart kettle.
    In it, brown veal cubes well, turning on all sides.
    Add onion, okra and tomatoes.
    Cover and cook 15 minutes.
    Add 2 quarts of water and remaining ingredients.
    Cover and bring to boiling.
    Reduce heat; simmer 2 hours, stirring occasionally. Makes 5 quarts (20 servings).
