Souffleed Rice Casserole - cooking recipe

Ingredients
    2 Tbsp. butter
    3 or 4 green onions (white part only), thinly sliced
    2 c. cooked rice
    1/4 c. minced parsley
    2 egg yolks, slightly beaten
    1/4 c. milk
    1/2 c. grated Parmesan cheese (1 1/2 oz.)
    1/2 tsp. salt
    1/4 tsp. pepper
    2 egg whites
Preparation
    Preheat
    oven
    to
    350\u00b0.
    Lightly butter 1 quart casserole. Melt
    butter
    over
    low heat.
    Add onions; saute 2 to 3 minutes. Stir in rice, parsley, egg yolks, milk, cheese, salt and pepper. Beat egg whites until soft peaks form.
    Fold them into rice mixture.
    Spoon into buttered casserole.
    Place this in a slightly
    larger
    pan.
    Pour in enough hot water to come halfway up
    side
    of
    casserole.
    Bake
    30
    minutes
    or
    until slightly puffed and firm.
    Serves 4 to 6.
