California Pumpkin Raisin Bread - cooking recipe

Ingredients
    1 c. vegetable oil
    3 c. sugar
    4 eggs
    1 1/2 c. pumpkin
    1 1/2 tsp. cinnamon
    1 1/2 tsp. nutmeg
    1 1/2 tsp. salt
    1 c. water
    3 1/2 c. flour
    1 tsp. baking soda
    2 c. raisins
    coconut or nuts (optional)
Preparation
    Mix well oil, sugar and eggs in large bowl.
    Add pumpkin, water and spices; blend well.
    In another bowl, mix flour, soda and raisins.
    No sifting necessary and this coats the raisins so they stay moist.
    Add this to creamed mixture and pour
    evenly into 4 (1 pound size) greased coffee cans or 2 loaf pans.
    Bake at 350\u00b0 for 1 hour or until toothpick inserted in the center comes out clean.
    Cool upright for 15 minutes.
    Remove from cans and let cool.
