Cold Spiced Carrots - cooking recipe
Ingredients

2 lb. carrots, sliced like coins
2 medium onions, sliced thinly
2 green peppers, sliced into rings or strips
1 can condensed tomato soup or substitute 1 1/2 c. homemade tomato sauce for fresher flavor
3/4 c. sugar
1/3 c. vinegar (cider vinegar preferred)
1/2 c. salad oil
1 Tbsp. prepared mustard
Preparation

Briefly cook the carrot coins by the desired method.
Drain well and mix with raw onions and pepper strips.
Place in a nonmetallic bowl with lid.
Use a wire whisk and electric blender or food processor to combine soup, sugar, vinegar, oil and mustard.
Pour over vegetables.
Cover and marinate overnight. Makes 10 servings.
