Taylor'S Favorite Gouda Cheese Soup - cooking recipe

Ingredients
    4 Tbsp. butter, divided
    1/4 c. flour
    4 c. meat stock
    1/2 lb. Gouda cheese, shredded
    2 Tbsp. sour cream
    salt and pepper
    1 bunch spring onions, cut in 1/4-inch rings
Preparation
    Melt 3 tablespoon butter, whisk in flour.
    Add stock and whisk to remove lumps.
    Bring to a boil, cover and simmer 5 minutes. Add cheese and sour cream.
    Stir until melted.
    Season.
    Saute onion in 1 tablespoon butter.
    Add to individual soup bowls before serving.
