Red Beans And Rice With Smoked Sausage - cooking recipe

Ingredients
    3 (16 oz.) cans red beans or kidney beans
    1/4 c. onion, chopped
    1 clove garlic, chopped
    1 bay leaf
    2 strips bacon, cut into 1-inch pieces
    2 Tbsp. Worcestershire sauce
    1/2 tsp. black pepper
    1/2 tsp. salt
    1/4 tsp. Tabasco
    pinch of thyme
    1 lb. smoked sausage, cut into 1-inch diagonals
    6 c. hot, cooked rice (long or medium grain)
Preparation
    Place all ingredients, except sausage and rice, in a 2-quart saucepan.
    Bring to a boil; reduce heat to a simmer, cover and cook for 2 hours, stirring occasionally.
    Add sausage to red beans the last 30 minutes of cooking time.
    Serve over rice (1 cup red beans over 1 cup rice).
    Serves 6.
