Chicken Croquettes - cooking recipe

Ingredients
    3 Tbsp. butter
    4 Tbsp. minced parsley
    1/2 tsp. salt
    1 c. diced chicken
    crumbs
    1 tsp. chili powder
    3 Tbsp. flour
    1 c. milk, scalded
    1 egg, beaten
Preparation
    Melt butter; add flour and seasonings; gradually add scalded milk, stirring until smooth.
    Cook until thick and smooth.
    Add diced chicken and minced parsley.
    Cool.
    Shape.
    Dip in beaten egg; roll in finely sifted bread or cracker crumbs.
    Fry in deep fat (365\u00b0) until well browned.
    Drain on absorbent paper.
    Serve with cream peas or chili sauce.
