Famous Lemon Pie - cooking recipe

3 Tbsp. cream cornstarch
1 1/4 c. sugar
1/4 c. lemon juice
1 Tbsp. grated lemon rind (optional)
3 eggs, separated
1 1/2 c. boiling water
1 (9-inch) pie shell
6 Tbsp. sugar
Preparation

Combine cornstarch, sugar, lemon juice and lemon rind.
Beat egg yolk.
Add to cornstarch mixture.
Gradually add boiling water.
Heat to boiling, then boil gently for 4 minutes, stirring constantly.
Pour into pie shell.
Beat egg whites stiff, but not dry.
Slowly beat in 6 tablespoons sugar.
Spread meringue over pie, covering and sealing to the edge.
Bake at 425\u00b0 for 4 to 5 minutes, until brown.
Cool before serving.
