Chicken Tetrazzini - cooking recipe
Ingredients

6 Tbsp. butter
2 Tbsp. flour
2 c. chicken stock
1/2 tsp. white pepper
1 c. heavy cream
2 Tbsp. sherry
1/4 c. grated Swiss cheese
1/4 lb. mushrooms, sliced
1/2 lb. spaghetti, cooked
2 c. sliced, cooked chicken
1/2 c. grated Parmesan cheese
Preparation

Melt half of butter; blend in flour until smooth.
Gradually add the chicken stock, stirring constantly to the boiling point. Add the pepper, cream, sherry and Swiss cheese.
Cook over low heat 10 minutes, stirring frequently.
In a skillet, saute mushrooms 5 minutes in remaining butter.
Add cooked spaghetti and half the sauce.
Mix lightly.
Spread in a buttered 1 1/2-quart casserole dish.
Mix the chicken with remaining sauce and pour over the spaghetti.
Sprinkle with Parmesan cheese.
Bake 30 minutes at 350\u00b0.
Serves 4 to 6.
