Onion And Cucumber Relish - cooking recipe

Ingredients
    2/3 c. distilled white vinegar
    2/3 c. cold water
    4 Tbsp. sugar
    2 tsp. salt
    2 cucumbers (7 or 8 inches long)
    2 medium sliced onions
Preparation
    In container, stir together vinegar, water, sugar and salt. Pare cucumbers thinly.
    Run sharp tines of a fork lengthwise down the cucumbers to score, slice very thin.
    Peel onions and slice thin, separate into rings.
    Add cucumbers and onions to marinate. Cover.
    Chill at least a couple of hours before serving.
    Leave vegetables in marinade and use a pierced or slotted serving spoon. Makes 10 to 12 servings.
