Depression Cake - cooking recipe
Ingredients

2 c. granulated sugar
1 lb. raisins
2 c. hot water
1/4 c. vegetable oil
1 tsp. cinnamon
1/2 tsp. nutmeg
2 1/4 c. flour
2 tsp. baking soda
1 tsp. vanilla
1/2 c. chopped nuts (optional)
Preparation

In a saucepan, combine sugar, raisins, hot water, vegetable oil, cinnamon and nutmeg.
Bring mixture to a boil.
Continue cooking at a low boil for 5 minutes.
Remove from heat and cool completely.
Meanwhile, sift flour with baking soda.
Blend dry ingredients with cooled raisin mixture.
Add vanilla and chopped nuts, if desired.
Turn into greased and floured 9 x 13-inch baking pan.
Bake at 350\u00b0 for 30 to 45 minutes or until cake top springs back to the touch.
Makes 12 servings, each with 492 calories, 17 grams fat and 0 mg cholesterol.
