Zucchini And Corn(Calabacitas Con Maiz) - cooking recipe

Ingredients
    2 medium zucchini
    2 Tbsp. bacon drippings or oil
    kernels from 6 ears fresh corn or 1 (16 oz.) can, drained
    1 small onion, minced
Preparation
    Wash zucchini thoroughly and dice.
    Do not peel.
    Heat bacon drippings or oil in large skillet.
    Simmer zucchini, corn and onion in covered skillet over low heat 15 to 20 minutes until tender and lightly browned.
    Serve hot with tortillas.
    Makes 3 to 4 servings.
