Mock Apple Pie - cooking recipe
Ingredients

36 Ritz crackers
pastry for 2 crust pie
2 c. water
2 c. sugar
2 tsp. cream of tartar
2 tsp. lemon juice
grated peel of 1 lemon
3 Tbsp. butter
cinnamon to taste
Preparation

Break the crackers coarsely. Put into pastry lined pan. Combine the water, sugar and cream of tartar in a saucepan.
Boil gently 15 minutes; add lemon juice and peel. Cool.
Pour syrup over crackers. Dot with butter and sprinkle cinnamon. Cover with top crust. Trim fluted edges. Cut slits in top. Bake at 425\u00b0 for 30 to 35 minutes. Serve warm.
