Squash Or Eggplant Casserole - cooking recipe
Ingredients

6 or 7 squash or 1 large eggplant
1 can mushroom soup
2 eggs, beaten
1/2 c. chopped onion
1 c. grated cheese
1 c. cracker crumbs
1/2 stick melted oleo
Preparation

Cook squash or eggplant. Add mushroom soup, eggs, onion and cheese. Add half of crumbs. Pour in casserole and top with oleo. Sprinkle with cracker crumbs. Bake 30 minutes at 350\u00b0.
