Diabetic Carrot Cake - cooking recipe

3 large eggs
1 c. unsweetened pineapple juice
1 tsp. baking soda
1 tsp. baking powder
1/2 c. softened butter
2 1/2 c. flour
1 tsp. nutmeg
1 tsp. cinnamon
3 c. grated carrots
Preparation

Beat together eggs, butter and pineapple juice.
Add flour, baking soda, baking powder and spices. Beat well.
Stir in carrots.
Spread half the batter evenly in an oiled and floured 9 x 13-inch baking pan.
