Italian Eggplant - cooking recipe

Ingredients
    2 medium eggplants
    1 lb. ground beef
    garlic salt
    cracker crumbs
    1/2 medium onion
    oil or margarine
    salt and pepper
    1 beaten egg
Preparation
    Put halves of eggplant in salt water and boil until tender. Remove halves and take out pulp, leaving each shell clean.
    Handle carefully.
    Cool.
    In skillet with small amount oil, brown onion and add ground beef; cook until done.
    Chop eggplant pulp fine and add to meat and seasoning.
    Add egg and mix well.
    Lay the eggplant shells in a greased baking dish and top with meat mixture.
    Cover with crushed cracker crumbs.
    Dot with butter. Bake at 400\u00b0 until brown.
