Ingredients

1 1/2 c. butter or margarine
3 c. sugar
6 eggs
1 1/2 tsp. vanilla extract
1 1/2 tsp. lemon juice
1 Tbsp. grated lemon rind
4 1/2 c. sifted all-purpose flour
1 tsp. salt
3/4 tsp. baking powder
3/4 tsp. soda
1 1/2 c. buttermilk
Preparation

Cream the butter; gradually add sugar, beating until light and fluffy.
Add eggs, one at a time, beating well after each addition. Blend in vanilla, lemon juice and rind.
Sift together the dry ingredients; add alternately with buttermilk to creamed mixture. Turn batter into 2 greased and floured 9 x 5 x 3-inch loaf pans. Bake in a 350\u00b0 oven for about 1 hour and 10 minutes or until done. Cool in pans 10 minutes.
Remove from pans and finish cooling on racks.
Makes 2 loaves.
