Hedgehogs - cooking recipe
Ingredients

2 c. shelled walnuts or pecans, coarsely chopped
1 c. dates, cut up coarsely
2 c. shredded coconut
1 c. brown sugar, firmly packed
2 eggs (unbeaten)
Preparation

Mix dates, nuts and 1 1/2 cups coconut, then add all ingredients.
Mixture will be stiff.
Scoop up a spoonful of mixture and shape into a roll as thick as a frankfurter and half as long.
Roll each in remaining coconut.
Place on greased baking sheet; bake for 10 to 12 minutes, or until coconut is just slightly browned, at 350\u00b0.
If shaped into a ball and cooked in paper cups, let Hedgehogs cool completely.
They will set as they cool.
Will keep well.
