Italian Vegetable Relish Marinara - cooking recipe

Ingredients
    1 head cauliflower, cut in flowerets
    3 carrots, cut in 3-inch strips
    2 ribs celery, cut in 1-inch diagonal pieces
    1 green pepper, cut in strips
    1 (4 oz.) jar pimentos, cut in strips
    1/4 tsp. pepper
    1/2 c. stuffed olives
    1 c. green beans, cut in 2-inch pieces
    3/4 c. white vinegar
    3/4 c. water
    1/2 c. corn oil
    2 Tbsp. sugar
    2 tsp. salt
    3/4 tsp. oregano
Preparation
    Combine all ingredients in large pot.
    Bring to a boil. Reduce heat and simmer, covered, for 8 to 10 minutes.
    (Vegetables will be tender-crisp.)
    Cool in marinade and refrigerate for 24 hours, turning vegetables occasionally.
