Chicken Rice Soup - cooking recipe

Ingredients
    1 whole chicken
    1 bay leaf
    1/4 onion, diced
    1 stalk celery
    water
    1 1/2 tsp. salt
    2 c. uncooked rice
    2 carrots, thinly sliced
    1 stalk celery, finely chopped
    1/8 c. onion, minced or 2 green onions, sliced (even the green tops)
Preparation
    Boil chicken in water with bay leaf, onion, celery and salt. When tender, remove chicken and strain broth.
    Add a little more water if necessary.
    Add the rice and the remaining vegetables to the broth.
    Cook until vegetables are tender.
    Remove meat from chicken; cut into cubes.
    Add to soup.
    A little chicken base or bouillon may be added.
    Serves 6 to 8.
