Broiled Eggplant - cooking recipe

Ingredients
    1/4 c. dry bread or corn flake crumbs
    2 Tbsp. grated Parmesan cheese
    dash of garlic powder
    8 slices (1 medium) peeled eggplant
    1 egg, slightly beaten
Preparation
    Combine first 4 ingredients.
    Dip eggplant slices in egg, then coat with crumb mixture.
    Place in shallow baking pan.
    Broil 5 to 7 inches from flame 3 to 5 minutes; turn slices over and continue broiling 3 to 5 minutes until tender.
    Serve hot.
