Chicken And Artichoke Saute - cooking recipe

Ingredients
    1 Tbsp. oil
    1 1/4 lb. skinned and boneless chicken breasts, cut in strips (about 2 c.)
    1 medium red bell pepper, cut in strips
    1 can water-packed artichoke hearts, drained and quartered
    1/4 tsp. ground coriander or 1/8 tsp. ground nutmeg
    1/4 tsp. salt
Preparation
    Heat oil over medium heat.
    Add chicken pieces to skillet and cook over medium-high heat, stirring often until chicken is white and opaque.
    Add pepper strips; cook and stir 3 minutes or until strips are crisp-tender.
    Add remaining ingredients and stir about 2 minutes until artichokes are heated through.
    Serve immediately. Makes 4 servings.
