Coq Au Vin(Chicken Casserole; Serves 6) - cooking recipe

Ingredients
    1 chicken (about 4 lb.), cut into 10 serving pieces
    salt and freshly ground pepper
    6 Tbsp. all-purpose flour
    bouquet garni*
    1 slice streaky bacon (about 3 oz.)
    24 small button mushrooms
    1 tsp. vegetable oil
    2 oz. butter
    24 small pickling onions, peeled
    2 tsp. cognac
    3 c. red Burgundy (such as Chambertin)
    3 gloves garlic, peeled
    4 pinches of freshly grated nutmeg
    1 tsp. sugar
    croutons (for serving)
Preparation
    *Use 1 bay leaf, 1 sprig thyme, 1 sprig rosemary and 8 sprigs parsley.
