Canadian Cheese Soup - cooking recipe

Ingredients
    1 c. carrots, minced 1/8-inch
    1 c. yellow onions, minced 1/8-inch
    1 c. celery, minced 1/8-inch
    1/4 lb. margarine
    1/2 c. flour
    3 c. Campbell's chicken broth
    3 c. half and half
    2 lb. Velveeta cheese, cut into small chunks
    1 Tbsp. fresh parsley, chopped fine
Preparation
    Melt margarine in large skillet.
    Add all the vegetables at once and saute until soft, but not brown.
    Add flour and stir to combine.
    Cook until it begins to turn a light brown color.
