Zucchini Pickles - cooking recipe

Ingredients
    4 qt. unpeeled zucchini
    6 onions, sliced
    2 green peppers, chopped
    1 red pepper, chopped
    2 cloves garlic, chopped
    5 c. sugar
    1 1/2 tsp. turmeric
    1 1/2 tsp. mustard seed
    3 c. vinegar
    1/2 c. salt
    cracked ice
Preparation
    Wash and slice zucchini 1/2-inch thick.
    Add onions, peppers and garlic.
    Add salt and cover with cracked ice.
    Mix thoroughly. Let stand 3 hours; drain.
    Mix remaining ingredients and pour over squash mixture.
    Heat just to a boil.
    Put into sterilized jars and seal.
    Makes 8 pints.
    Ripe pimento may be added for color.
