Cheddar Apple Muffins - cooking recipe

Ingredients
    2 eggs
    1 (8 oz.) container Dutch apple low-fat yogurt
    1/4 c. firmly packed light brown sugar
    2 c. buttermilk baking and pancake mix
    1/2 c. raisins
    4 oz. (about 1 c.) shredded Cheddar cheese
Preparation
    Preheat oven to 400\u00b0.
    Butter or line with paper baking cups, 12 (2 1/2-inch) muffin cups.
    In a large bowl, beat eggs until blended.
    Stir in yogurt and sugar.
    Add baking mix; stir until just moistened.
    Stir in cheese and raisins.
    Fill prepared muffin cups 2/3 full.
    Bake until a toothpick inserted in the center comes out clean, about 15 minutes.
    Remove muffins from pan.
    Serve warm or place on wire racks to cool completely.
    Store in a closed plastic container.
    Makes 12.
