Cream Cheese Mints - cooking recipe

Ingredients
    1 (3 oz.) pkg. cream cheese (room temperature)
    1/4 to 1/2 tsp. peppermint flavoring
    food coloring (if desired)
    2 1/2 c. confectioners sugar
Preparation
    In a mixing bowl, beat cream cheese until soft.
    Add coloring and flavoring.
    Gradually add confectioners sugar, mixing and kneading until consistency is like pie dough or putty.
    Add more sugar if you want firmer.
    Roll into balls the size of a marble. Place one side in small amount of granulated sugar.
    Place sugar side down into cavity of mold, pressing from edge to center. Unmold at once and place on waxed paper to dry.
    Makes 20 to 25 mints.
