Acorn Squash Souffle - cooking recipe

Ingredients
    3 medium to large acorn squash (choose those that are more orange in color)
    3 eggs
    1 stick butter or margarine
    2 c. sugar or to taste
    1 c. milk
    1/2 tsp. nutmeg
    1/2 tsp. cinnamon
Preparation
    Rinse and peel squash; cut in half and remove seeds.
    Cut into cubes and boil until tender (like potatoes).
    When done, mash the squash in a large bowl or pot.
    Whip with beater until smooth (this will also remove any stringy pieces).
    When smooth, add all other ingredients and beat to combine.
    Pour into a long baking dish and bake at 350\u00b0 until firm and brown around edges.
    Serve hot or cold. Happy baking.
