Chicken And Rice Casserole - cooking recipe

Ingredients
    5 c. cooked chicken, chopped (reserve chicken broth)
    1 large jar pimentos
    3 cans cream of mushroom soup
    2 1/2 c. celery, chopped
    1 green pepper, chopped
    1 large onion, chopped
    2 Tbsp. oleo
    2 1/2 c. rice
Preparation
    Mix chicken and pimentos.
    Brown celery, pepper and onion in oleo.
    Combine with chicken mixture; mix well.
    Cook rice in chicken broth until tender.
    Place in layers in casserole dish the rice, mushroom soup and chicken mixture on top.
    Bake 1 hour at 300\u00b0 or until bubbly.
    Serves 18 to 20.
