Raisin Loaf - cooking recipe
Ingredients

1/3 c. shortening
3/4 c. sugar
2 tsp. mandarin peel, chopped
1/3 c. mandarin juice
1 c. chopped walnuts
1/2 c. chopped raisins
3 1/2 tsp. baking powder
1 1/2 tsp. salt
1 c. milk
1 egg
3 c. flour
Mandarin Glaze
Preparation

Cream shortening and sugar, add mandarin peel and egg, beat until light and fluffy.
Mix flour, baking powder, and salt.
Blend into creamed mixture alternately with milk and mandarin juice. Stir in walnuts and raisins.
Turn into greased 9 x 5 x 3-inch loaf pan.
Let stand 20 minutes.
Bake in 350\u00b0 oven for 1 hour 10 minutes.
Let stand 10 minutes, then turn out onto wire rack to cool.
When loaf is still slightly warm, spoon Mandarin Glaze over top.
