Light Fettuccini Alfredo - cooking recipe
Ingredients

8 oz. uncooked fettuccini
1/3 c. butter or margarine
1 1/2 tsp. flour
1/4 tsp. pepper
1/8 to 1/4 tsp. nutmeg, if desired
1/3 c. Half and Half
1 1/2 (4 oz.) shredded Parmesan cheese
1 Tbsp. fresh parsley, chopped
Preparation

Cook fettuccini, drain and cover to keep warm. Melt butter in large skillet over low heat. Stir in flour, pepper, and nutmeg. Gradually stir in Half-and-Half. Cook over low heat for 5 minutes or until mixture thickens slightly, stirring frequently. Remove from heat and add drained fettuccini, Parmesan cheese and chopped parsley. Blend Well. Yields 8 servings.
