Italian Potato Salad - cooking recipe

Ingredients
    6 diced potatoes
    1/2 c. olive oil
    1 1/2 c. vinegar
    1 c. diced tomatoes
    1/2 c. chopped black olives
    3 Tbsp. parsley flakes
    1 Tbsp. oregano
    1/2 c. finely chopped onion
Preparation
    Soak onion, oregano, parsley and tomatoes in olive oil and vinegar while cooking potatoes.
    Cook potatoes until tender; let cool.
    Pour mixture over potatoes; toss well.
    Salt and pepper to taste.
