Oven-Roasted Vegetables - cooking recipe

Ingredients
    1 medium zucchini, cut into bite-size pieces
    1 medium red bell pepper, cut into bite-size pieces
    1 medium green bell pepper, cut into bite-size pieces
    2 c. fresh broccoli, in bite-size pieces
    1 red onion, sliced
    3 Tbsp. extra virgin oil
    1 tsp. salt
    1/2 tsp. freshly ground black pepper
Preparation
    Heat oven to 450\u00b0. Place vegetables in a large roasting pan. Toss with the olive oil, salt and pepper to mix and coat. Spread in a single layer in the pan. Roast for 30 minutes, stirring occasionally, until the vegetables are
    lightly browned and tender.
