Mulligatawny Soup - cooking recipe

Ingredients
    1/2 c. chopped onions
    1/2 c. chopped celery
    1 Tbsp. margarine
    2 tsp. curry powder
    1/2 c. cooked, diced chicken
    1/2 c. rice
    1/4 tsp. pepper
    1/2 c. chopped carrots
    2 Tbsp. olive oil
    1 1/2 Tbsp. flour
    5 c. chicken broth
    1 peeled and diced apple
    1/4 tsp. thyme
Preparation
    Cook onions, celery and carrots in soup pot in olive oil until tender.
    Add margarine, flour and curry powder.
    Stir and cook for one minute.
    Add chicken broth; bring to boil.
    Add chicken; simmer for one minute.
    Add apple, rice, thyme and pepper and simmer for 15 minutes more.
    Makes six 1 cup servings with 156 calories each.
