1/4 c. fresh lemon juice
1 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. black pepper
Preparation

In a 13 x 9-inch ovenproof casserole dish, arrange potatoes. Combine lemon juice, olive oil, salt and pepper; pour over potatoes.
Roast in a 350\u00b0 oven for 30 to 40 minutes or until potatoes are tender, turning 3 to 4 times to baste.
