Ingredients

4 medium yellow onions, chopped
3 Tbsp. butter
1 Tbsp. flour
5 c. stock or water
salt and pepper
1 bay leaf
1 to 2 dinner rolls, sliced or 2 slices dry white bread, cut into 4 pieces
1/2 c. Gruyere or sharp Cheddar cheese, grated
2 cucumbers, seeded and julienned
1 small mild onion, minced
32 oz. yogurt (plain; nonfat or whole milk, either will work)
1 tsp. salt
1/2 tsp. sugar
1/4 tsp. crushed red pepper (optional)
1/4 tsp. crushed black pepper
Preparation

Beat yogurt with a fork until smooth.
Add salt, sugar, red pepper and black pepper.
Mix well.
Add cucumber and onions; mix. Serve well chilled or at room temperature as desired.
