Jim'S Mother'S Chicken And Rice Casserole - cooking recipe

chicken (skinless)
vegetable oil
margarine
1/4 c. celery, chopped
1/4 c. green pepper
1/2 c. onion, chopped
1 c. rice (instant)
2 Tbsp. instant chicken bouillon granules
1 pkg. frozen peas
1 can tomatoes
1 c. water
Preparation

Brown chicken in small amount of oil and margarine; remove from pan.
Add celery, onion and green pepper to drippings and saute.
Add rice and saute, stirring constantly until slightly translucent.
Add can of tomatoes that have been blenderized for just a few seconds, water and chicken bouillon.
Arrange chicken down into rice, cover and bake at 350\u00b0 until rice is almost done. Spread defrosted peas over casserole and continue to cook for at least 10 minutes.
(I prefer to use boneless chicken breasts or tenders.)
