Fresh Red Sauce - cooking recipe

Ingredients
    1/2 lb. fresh hot red chilies, stemmed, seeded and chopped
    1/4 c. olive oil
    2 Tbsp. coarsely chopped garlic
    2 tsp. salt
    1 c. boiling water
    1/2 c. coarsely chopped onions
    2 tsp. oregano
Preparation
    Combine the chilies and boiling water in a bowl; let them steep for about 10 minutes.
    Transfer the mixture to an electric blender; blend on high speed for 30 seconds.
    Scrape out the jar with a rubber spatula.
    Add onions, oil, garlic, oregano and salt. Blend again until the red chili sauce is a smooth puree.
    Taste for seasoning.
    This can be used for dipping fresh cooked shrimp or over a broiled or baked fish.
