Brigidas' Pork Loin - cooking recipe
Ingredients

3 lb. pork loin
1 Tbsp. salt
2 tsp. black pepper
1/4 c. olive oil
2 heads garlic
1/3 c. white wine
1/3 c. water
3 slices sandwich bread
1/2 can chicken broth
Preparation

Cut excess fat from pork loin.
Sprinkle with salt and pepper, let set for 30 minutes.
Put oil in pressure cooker and heat.
When hot add garlic, peeled but whole, and bread.
When they are brown take out and put aside.
Quick fry the pork loin (in 2 pieces) in the oil until brown.
Mash the garlic and bread together and add to the pot when the meat is brown.
Add the wine, water and chicken broth.
Cover and cook for 30 minutes at medium-high setting.
When done take the meat out and cool.
Slice meat into thin slices.
Put what is left in the pot into blender and liquify, creating the meat sauce, which accompanies the pork loin.
Serve with mashed potatoes.
