Green Bean And Shiitake Mushroom Sauté - cooking recipe

Ingredients
    1/2 lb. shiitake mushrooms, sliced and stems removed
    2/3 c. thinly sliced red onion wedges
    1 Tbsp. olive oil
    1 lb. green beans, trimmed
    1 large garlic clove, minced
    1 tsp. minced fresh thyme
    1/4 c. reduced-sodium chicken broth
    2 tsp. sherry vinegar
    1 tsp. salt
    1/4 tsp. sugar
    1/4 tsp. black pepper
Preparation
    Fill a large stockpot 2/3 full with lightly salted water; bring to boil.
    Meanwhile in skillet over medium-high heat, cook mushrooms and onion in hot oil for 5 minutes, stirring frequently. Add beans to boiling water and cook 5 to 7 minutes until crisp-tender; drain.
    Add garlic and thyme to mushrooms and cook, stirring for 1 minute.
    Stir in broth, vinegar, sugar and pepper and bring to boil; continue to stir.
    Pour mixture over drained green beans.
    Toss to coat beans and serve.
    Makes 6 servings.
