Roast Leg Of Lamb - cooking recipe

Ingredients
    5 to 6 lb. leg of lamb
Preparation
    Rub lamb with salt and pepper.
    Arrange fat side up on rack in roasting pan.
    Roast at 325\u00b0 for 28 minutes per pound for medium or until meat thermometer registers 165\u00b0.
    Baste during last hours of cooking with either Mint or Honey-Mustard Glaze.
    Serve with Mint Sauce after roast has set for 20 minutes to retain juices.
