Ingredients

1 (14 oz.) blueberry muffin mix
1 egg
1 c. milk
1/2 tsp. grated orange rind
1 c. blueberries
Preparation

Rinse blueberries and drain.
Combine muffin mix, egg, milk and orange rind.
Beat until well blended.
Fold in blueberries. Fry on greased griddle until top bubbles.
Turn and brown other side.
Serve with blueberry syrup.
