Fresh Pepper Relish - cooking recipe

Ingredients
    vegetable cooking spray
    1 c. shredded carrot
    3/4 c. chopped onion
    1/2 c. chopped green pepper
    1/2 c. chopped sweet red pepper
    1 banana pepper, seeded and chopped
    3 Tbsp. raisins
    3 Tbsp. cider vinegar
    2 Tbsp. sugar
    1/4 tsp. salt
Preparation
    Coat a nonaluminum saucepan with cooking spray.
    Place over medium-high heat until hot.
    Add carrot and next 5 ingredients; saute until crisp-tender.
    Stir in vinegar, sugar and salt.
    Bring to a boil.
    Reduce heat and let simmer 5 minutes, stirring occasionally.
    Let cool to room temperature, cover and chill thoroughly.
    Serve with pork or poultry.
    Yields 2 cups (11 calories and 8% fat per tablespoon).
