Bleu Cheese Vinaigrette - cooking recipe

Ingredients
    2 Tbsp. white wine vinegar
    1 tsp. Dijon mustard
    1/4 c. vegetable oil
    3 Tbsp. olive oil
    1/4 tsp. ground pepper
    2 oz. Bleu cheese, crumbled
    2 Tbsp. minced shallots
Preparation
    Mix vinegar and mustard in a small bowl.
    Whisk in both oils in a thin stream. Add cheese, shallots and pepper.
    Let stand at least 30 minutes to blend flavors.
    (Can be prepared 1 day ahead and refrigerated.)
