Lemon Tea Muffins - cooking recipe
Ingredients

1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. butter
1/2 c. sugar
2 eggs, separated
3 Tbsp. lemon juice
1 tsp. lemon rind
2 Tbsp. sugar
1/4 tsp. cinnamon
Preparation

Mix flour, baking powder and salt. Cream butter and sugar until light and fluffy. Beat yolks until thick. Blend well with creamed mixture. Add flour mixture alternately with lemon juice. Beat egg whites until stiff. Fold whites and lemon rind into batter. Fill muffin pans 2/3 full. Combine 2 tablespoons sugar and cinnamon and sprinkle on top of muffins. Bake at 375\u00b0 for 15 to 20 minutes.
