Rice Pudding - cooking recipe

Ingredients
    1/2 tsp. salt (for rice)
    1 3/4 c. water (for rice)
    2 c. milk
    2 eggs, beaten
    1 tsp. vanilla
    nutmeg
    1 c. cooked rice (Uncle Ben's conventional rice)
    1/3 c. sugar
    1/4 c. raisins
    cinnamon
Preparation
    Heat oven to 350\u00b0.
    Bring water to boil.
    Stir in rice and salt.
    Cover and simmer until all water is absorbed, approximately 30 minutes.
    Add milk and boil gently, stirring occasionally, until mixture thickens slightly, about 5 minutes.
    Mix eggs, sugar and vanilla in a bowl.
    Gradually stir in rice mixture; mix well. Stir in raisins and sprinkle nutmeg and cinnamon over top.
    Place casserole in a pan containing about 1 inch hot water.
    Bake at 350\u00b0 for 45 to 50 minutes or until knife inserted near center comes out clean.
    Makes 5 to 6 servings.
    Add toppings of choice (fruit, icing, preserves).
