Grated Potatoes - cooking recipe

Ingredients
    3 medium baking potatoes, scrubbed
    1/4 c. chopped onion
    2 Tbsp. butter
    2 Tbsp. oil
    1/4 tsp. salt
    black pepper to taste
Preparation
    Grate potatoes, skin and all, on a medium grater.
    Add onion. Melt butter and oil in skillet.
    When hot, spread the potatoes to a depth of about 1/4-inch.
    Cover and cook over medium-low heat until the bottom is crisp and brown.
    Flip over and brown on other side.
    Season with salt and pepper.
    Cut into quarters and serve.
