Mary'S Sausage And Peppers - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 lb. Italian sausage
    1 small onion, chopped
    2 or 3 green peppers, chopped
    1 clove garlic, chopped
    2 or 3 fresh tomatoes or medium-size can tomatoes
    1 tsp. Italian seasoning or basil, parsley, oregano and rosemary
    salt and pepper
Preparation
    Remove sausage from its casing and cut into small pieces.
    In a large pan, put olive oil and sausage to brown.
    Brown well.
    Add peppers, onion and garlic.
    Brown and then add tomatoes and Italian seasoning or the herbs listed.
    Add salt and pepper to taste. Cook, covered.
    Simmer about 20 minutes.
    Serve in steak rolls or on top of cooked spaghetti.
