Smothered Quail - cooking recipe
Ingredients

3 Tbsp. butter
1 medium onion, chopped fine
1/2 lb. fresh mushrooms, sliced
3 Tbsp. butter
1 Tbsp. oil
12 quail breasts
1 c. light cream
1/2 c. dry white wine
1 can cream of mushroom soup
Preparation

Melt 3 tablespoons butter and saute onion and mushrooms until tender.
Remove from pan.
Melt 3 tablespoons butter and oil; saute birds until brown.
Remove from pan; pour off remaining fat. Add wine; scrape up particles on bottom of skillet.
Add soup, onion, mushrooms and cream; stir until well blended.
Return birds, spooning sauce over.
Cover and simmer for 30 minutes.
