Smoked Wild Turkey 2 - cooking recipe
Ingredients

1 (12 to 14 lb.) turkey
1 tsp. salt
1 Tbsp. black pepper
1 tsp. sage
1/2 c. melted butter
2 cloves garlic
1 large onion, chopped
1/2 c. Sauterne
Preparation

Soak turkey in cold water for 3 hours to remove excess blood. Rub turkey with salt, pepper, sage and butter or margarine.
Place garlic and onions inside breast and splash cavity with Sauterne. Place on water smoker rack.
Add pecan or hickory chips to coals. Cook, covered, until coals die, usually 10 to 12 hours.
